Kolhapuri Misal Pav

The famous spicy Kolhapuri snack, Misal Pav is a popular Maharashtrian street food delicacy, served with spicy curry, farsan and bread. Enjoy this Kholapuri Misal Pav recipe for a breakfast treat or with afternoon snacks.

Kolhapuri "Misal Pav"
Ingredients
For Usal:
2 cups Sprouted Matki (Moth beans) / any sprouts
1 Potato - large
1 Onion -finely chopped
2 Green chillies -finely chopped
1 tsp Ginger garlic - paste - ( optional --i dont use )
coriander leaves Chopped
Lemon juice
1/4 tsp Turmeric haldi powder /
1/2 tsp chili powder Red
1/2 tsp Masala Tokri - Garam masala
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds jeera /
A pinch Asafoetida of / hing
5 - 6 Curry leaves
1 - 2 tbsps Oil
to taste Salt
For Kat / Raasa (thin Spicy Gravy):
1/2 cup coconut Dry - ;Grated or cut to small pieces
1 Onion -large chopped
2 Tomatoes -chopped
- 4 cloves Garlic -5
3/4 Ginger " - chopped
1 tbsp Coriander leaves chopped
1/2 tsp Turmeric haldi powder /
1 tsp chili powder Red
1 tsp Coriander dhania powder / powder
1/2 tsp Cumin jeera powder / powder
1/2 tsp Kala-Goda or Pav Bhaji Masala
2 - 3 tbsps Oil
1/2 tsp Mustard
a pinch Asafoetida / Hing
Sugar - little
to taste Salt
To serve:
Pav Buns
Curd Beaten ( optional )
Onions ,very finely chopped
Tomatoes ,very finely chopped
Coriander leaves ,very finely chopped
small wedges Lemon ,cut into
Farsan / Mixed Namkeen / Mixture
Steps

Take sprouted moth beans or matki and cook in a pressure cooker along with salt, turmeric powder, red chilli powder for one whistle. Now heat 1 tbsp oil in a tadka pan and add curry leaves, mustard seeds and pinch of asafoetida, switch off the heat add 1/4 tsp Masala Tokri Garam Masala to it and pour it over cooked beans.Heat 1tbsp butter in a pan and add chopped onions and saute for 3-4 minutes on medium heat until they turn slight golden brown.Add chopped ginger and grated dry coconut and cook for 1 minute. Add chopped tomatoes, coriander powder, cumin powder and cook until the tomatoes get mushy and pulpy.Allow the mixture to cool down and blend it in a fine paste.

Heat 1 tbsp butter in a pan, add blended paste and add red chilli powder, turmeric powder, Masala Tokri Pav Bhaji Masala and salt to your taste. Cook for 2 more minutes. Add 1.5 cups of water and cook for 6-7 minutes on medium low heat. Finish the kat with chopped coriander leaves and use it to top the usal. To ServeSlit the Pav buns and apply some butter as per your liking and warm them over tava, just take care not to overcook them. Now in a bowl first add layer of Usal (moth bean preparation , add second layer of kat and top it with chopped onion, coriander leaves and farsan. Scoop up the missal with soft buttered pav and enjoy !
