Brinjal Curry

One of the easiest recipes to cook, this yummy, aromatic brinjal curry with sambar masala makes it simply irresistible to taste!



INGREDIENTS

1/2 pound brinjal

2 tablespoon oil

1 teaspoon chana dal

1 teaspoon urad dal

1 teaspoon mustard seeds

1 onion

1 teaspoon cumin seeds

a few curry leaves.

1/4 teaspoon turmeric powder

2 teaspoon Masala Tokri Sambar Powder

salt to taste

a bunch of chopped coriander leaves

INSTRUCTIONS

Cut the brinjal into small pieces and keep them soaked in salt infused water to prevent from turning black.

Meanwhile, cut the onion in small cubes.


Take a pan and heat 2 tbsp of oil on medium flame. Once the oil is hot, add urad dal, mustard seeds, chana dal, curry leaves and onion.


As the onion turns translucent, add brinjal pieces, salt and turmeric powder.


Stir, mix it well and cook it covered over medium flame for 5 minutes.


After 5 minutes add Masala Tokri Sambar Powder and stir well. If you feel it is dry, add a little water.


Again cook it covered over low flame for 5 more minutes.


Add salt at the end and mix well.


Cook for 1-2 minutes, add chopped coriander pieces and mix well.


Your brinjal curry is now ready and tastes delicious with hot fluffy rice and chapatis.
